Just finally figured it out! The key is backing up the database. Wish I'd known earlier.
MQTTMaster: YMMV, but from my experience — WiFi was a mess for this use case.

Honestly, I'd choose OpenHAB over Smartthings for reliability. Note that the tradeoff.
